Mitica's "Smokin Goat" is a delicate gem from Spain's Canary Islands. Crafted with pasteurized Majorero goat's milk, it matures for 15 days, developing a smooth, elastic texture and caramel-colored rind with a woven pattern. Cold-smoked with beechwood after a week, it gains a subtle smokiness that enhances its mild, sweet flavor. The tribute to tradition includes mimicking the woven palm basket imprint on the rind.
